Founded in 1839 on the shores of the Cromarty Firth, Dalmore uses water from the River Alness and distils through an unusual arrangement of four wash stills — each fitted with a water-cooled flat top (rather than the traditional dome) to reduce reflux — and four spirit stills of a distinctive onion shape with water jackets. This produces a heavier, oilier new make. The complex cask programme is the distillery's defining characteristic: American white oak ex-bourbon barrels for primary maturation, followed by finishing in combinations of Matusalem oloroso sherry butts (the 'black gold' of Jerez), Apostoles PX, Amoroso, and Mackenzie Port pipes. The King Alexander III and Constellation Collection expressions have achieved some of the highest prices ever recorded for single malt Scotch at auction.
