Founded in 1846 and substantially rebuilt in 1974, Caol Ila is the largest distillery on Islay by volume, producing approximately 6.5 million litres of pure alcohol per year — the vast majority destined for Johnnie Walker blends. Malt is peated to ∼35 PPM using Islay peat, but the distillery's characteristically tall, narrow-necked stills encourage significant reflux, producing a lighter, grassier, more delicate peat character than its Islay neighbours. Fermentation runs 60–70 hours in stainless steel washbacks. Water is sourced from Loch nam Ban. Maturation is predominantly in American oak ex-bourbon barrels. The distillery sits on a dramatic hillside directly overlooking the Sound of Islay and the Jura hills beyond.
